Grilled Duck Breast with Blood Orange or Plum Salsa

Duck is quite possibly my favorite meat. It’s gorgeous, tender, and just luxurious seeming. I had been taught to always cook duck breast to have crispy skin in a skillet. One summer evening, on whim, I decided to grill the duck breast instead and it was a revelation. It took me a long time to feel like I could veer away of my training and start to experiment and I’m so happy that I finally did. There’s so much magic in discovering the unknown.
For Your Duck, You Need:
1 /2 or 1 duck breast per person. I prefer Magret, which are larger and can feed 2 portions per each, but depending on where you live, they can be more difficult to find in your grocery.
Liberty Duck is my absolute favorite and you can order online. You can also order from Hudson Valley Foie Gras my second favorite and D’Artagnan.
Mary’s sells a Pekin, which is about half the size, but still delicious, and more widely available in grocery stores like Whole Foods.
