I love a good salad and even better if there’s some crunch. This one is great because you can prep it in advance and even dress it at least 20 minutes before serving and it won’t wilt down to a soggy mess.
Please note, I am notorious for always making waaaaay too much salad because I love it so much. Please adjust the quantities to your guests salad eating habits. And when in doubt, keep the dressing on the side, or only dress half of the salad. the undressed mix will keep in your fridge for several days.
Ingredient List
Green and/ or Purple Cabbage (1/4 to 1/2 head per 6 people)
Romaine or Little Gem (1/4 to 1/2 head per 6 people)
Mint
Apple (Fuji, or your favorite- one that has a good acidity and mellow sweetness), 1 per 6 people
Feta
White Miso
Lemons
Salt
EVOO
To make the salad
Slice the washed cabbage thin on a mandolin or with a super sharp knife, add it to a large mixing bowl (for 6 people, you’ll probably use 1/4 to 1/2 of a cabbage)
