Bibb Lettuce Salad with thinly sliced Plums, roasted Almonds, & Champagne Vinaigrette

It’s no secret that I LOVE a bibb lettuce salad (AKA Boston Lettuce, AKA Butter Lettuce). The texture is so ruffly and delicate, it’s ideal for a light dressing to just barely drape the leaves. I’m sure by now you’re getting the hint that I love dishes that can move with the seasons and so it should come as no surprise that this does exactly that. The plums can easily be swapped with other stone fruit, like apricots, nectarines, peaches, and then go into pears, apples, and persimmons as the year moves into fall and winter.
