Arugula and Watercress Salad with shaved Mimolette, Apples, and Champagne Vinaigrette

I love salads so much. Mostly because they are such a delicious way to enjoy the changes of the season. I tend to follow a fairly regular salad formula and then swap out ingredients to move with the weather. A green (which could be tender and delicate in spring and summer like bibb, to hearty and bitter or spicy in winter, like endive), something crunchy, something creamy, something tart, and something umami. Sometimes ingredients pull double-duty, like the apples in this recipe.
